Tom Brown, Calgary : Miniature food & Artist
1/Your favorite food
Simplicity- I love nothing better than pain au chocolat
2/Your least favorite food
Anything which is seasoned incorrectly, or overcooked. Otherwise I’m notpicky!
3/The first restaurant you remember going to
Houston Pizza, a Greek owned pizza restaurant in Regina, SK, Canada. My dad painted a mural which stretched around the entire interior of the restaurant.
4/The one you remember going over and over
La Bodega, once again in Regina, SK, Canada. Mushroom tarts, smoked salmon crostini, ceviche, foie gras torchon, and a charismatic bartender. It is where I learned how much I love good food.
5/Your favorite wine
I participated in a tasting with Sandhill Estate’s Winemaker, Howard Soon. Canada has a vibrant winemaking community in a region called the Okanogan, and Howard had a bottle of Winemaker’s Reserve, a blend of Cabernet Sauvignon, Merlot, and Cabernet Franc. It was exceptional. When I am just drinking a bottle casually with friends, I have bought a lot of Sur de los Andes Malbec.
6/Where can we find you on the planet
Right Now, Calgary, AB, Canada. If I’m not home, I’m probably out somewhere cooking with theMiniature Kitchen
7/The first wine you ever tried
I can only remember it is a pungently sweet white wine my German grandparents were drinking when I was quite young, having a sip at their cottage and not entirely hating it.
8/And the last
2012 Meritage from Gray Monk
9/The dish you make best
I make a good long-ferment pizza dough, and a special honey-chili drizzle. It has won me many hearts
10/An album that make you thirsty
Getz/Gilberto, impossible to listen to this album and not be sitting by candlelight with someone special by the end
11/A taste from your childhood
From the same Grandparents who served me the wine- baby potatoes with melted butter and dill, all from my grandma’s garden
12/What would you drink at your last supper
I’m going off script, at my last dinner I would want a lot of very dark beer. Lately the Dirty Bird Black Lager from Last Best Brew Co. in Calgary
13/What is constantly in your fridge
Grainy Mustard! And outside of it sourdough
14/What would never be in your fridge
Leftover pizza. There is no such thing
15/What do you listen to when you drink/eat
A great album for that lately is Woman, by Rhye
16/Your favorite place where you live and why
The neighborhood I live in right now, Sunnyside. Reasons why: Sunnyside Natural Foods Market, proximity to downtown and the LRT system, a thriving Farmers Market, and we recently successfully petitioned the city to use only organic treatments in the neighborhood. They no longer spray pesticides and herbicides, now they spray organic compost tea!
17/What would be the best breakfast someone cook for for you
I have a special love for a Mexican dish, Chilaquiles, however if you wanted to make me waffles I wouldn’t say no either…
